Ingredients
- Egg white - 3 pieces
- Milk - 10 fl oz
- Wheat Flour - 5.3 oz
- Herbs - 1 bunch
- Pickled Chanterelles - 10.6 oz
- Tomatoes - 4 pieces
- Salt - to taste
- Grated Pecorino Pepato Cheese - 7.1 oz
- Garlic - 2 cloves
- Sugar - 1 teaspoon
Step by Step guide
Step 1
First, we will prepare the crepes. For this, beat the eggs with the milk, then add the flour, salt, and sugar. Finely chop the herbs and add them to the crepe batter. Fry the crepes in a preheated pan on both sides. You will get about 5–6 crepes.
Step 2
Slice the tomatoes into rounds, grate the cheese on a coarse grater, clean the mushrooms, slice them, and lightly sauté them with a bit of salt. If you are using garlic, crush it with a garlic press.
Step 3
Now we assemble the pie. For this, place one crepe in a baking dish, add some tomatoes (season with salt and pepper), mushrooms, and sprinkle with cheese and garlic, cover with a second crepe, and continue layering.
Step 4
The top crepe is only sprinkled with cheese, and we send the pie to a preheated oven at 356°F. Let the finished pie cool slightly and serve it hot or cold.
