Ingredients
- Skin-On Chicken Breasts - 17.6 oz
- Soy Sauce - 1 tablespoon
- Apple Wine - 1 tablespoon
- Scallions - 1 stalk
- Garlic - 1 clove
- Grated Ginger Root - 1 tablespoon
- Egg white - 1 piece
- Corn Starch - 3.7 oz
- Sugar - 2 tablespoons
- Vegetable Oil - to taste
- Meyer Lemon Juice - 2 tablespoons
- Salt - ½ teaspoon
- Sesame Oil - ½ teaspoon
- Chicken Broth - 3 tablespoons
Step by Step guide
Step 1
Cut the chicken into small strips. Transfer to a bowl, add soy sauce, rice wine, chopped green onion, ginger, and garlic, mix well, and refrigerate for 1 hour or overnight.
Step 2
Add the lightly beaten egg to the chicken and mix well. Then coat in cornstarch.
Step 3
Fill a wok a quarter full with oil and heat to 374°F. Add half of the chicken and fry for 3.5-4 minutes until golden brown. Place on paper towels. Repeat with the remaining chicken. Then return all the chicken to the oil and fry for a while until crispy. Drain.
Step 4
For the lemon sauce, mix lemon juice, sugar, salt, sesame oil, broth, and 0.5 teaspoon of cornstarch.
Step 5
Heat the wok over medium heat and pour in the lemon sauce. Stir constantly until thickened. Add the chicken and toss gently. Serve immediately.
