  • Cherries - 1.7 oz
  • Fennel - 0.5 oz
  • Avocado - 1.8 oz
  • Ricotta cheese - 0.7 oz
  • Spicy Yuzu Sauce - 0 fl oz
  • Pitted Cherries - 0.7 oz
  • Water - 1 fl oz
  • Acacia Honey - 0.2 oz
  • Lime Leaves - 1 piece
  • Cloves - 2 pieces
  • White Wine Vinegar - 0 fl oz
  • Salt - 0 oz
  • Ground Black Pepper - 0 oz
  • Olive Oil - 1 fl oz

Step by Step guide

Step 1

Place yuzu, water, cherries, honey, lime leaf, cloves, and white wine vinegar in a saucepan.

Step 2

Bring to a boil.

Step 3

Mash the cherries with a pestle to release their juice and turn the liquid red.

Step 4

Strain through a fine sieve and cool.

Step 5

Mix the lettuces, thinly sliced fennel, and spinach.

Step 6

Combine the avocado with smoked ricotta.

Step 7

Add the mixture to the greens.

Cut the cherries in half and add them to the salad with ricotta and avocado.

Step 9

Dress with cherry vinegar and olive oil.
