Description
Olive oil can be substituted by placing a small piece of butter on each potato. Rosemary can be replaced with thyme.
Ingredients
- New Potatoes - 8 pieces
- Flaky sea salt - a pinch
- Olive Oil - 2 tablespoons
- Fresh Rose Hips - 1 sprig
- Ground clove - a pinch
- Grated Pecorino Pepato Cheese - 2 tablespoons
- Garlic - 2 cloves
Step by Step guide
Step 1
Boil the potatoes in a sufficient amount of water until tender, so a fork can easily pierce them, but do not overcook. This takes about 12 minutes after boiling.
Step 2
Meanwhile, chop the fresh rosemary. Optionally, mince the garlic cloves.
Step 3
Preheat the oven to 410°F.
Step 4
Drain the water from the pot with the potatoes.
Step 5
Line a baking sheet with parchment paper. Spread the potatoes 5–7 cm apart. Using a potato masher, gently crush each potato, turn it 90 degrees, and crush it again. In other words, the potatoes should resemble thick pancakes. If the potatoes break apart, it’s not a problem; just gather the pieces back together.
Step 6
Brush with olive oil, sprinkle with coarse salt, freshly ground pepper, chopped fresh rosemary, optionally minced garlic, and grated Parmesan cheese. If you want the potatoes to have a golden crust on both sides, after crushing and brushing them, you can bake them for 15 minutes on one side, flip them over, and only then add the oil, spices, and cheese, return them to the oven, and bake for another 15 minutes.
Step 7
Bake in the oven for 20–25 minutes until golden brown.
