- Parsley - 1.4 oz
- Dill - 1.4 oz
- Tarragon - 1.4 oz
- Mixed salad greens - 4.2 oz
- Strawberry - 7.1 oz
- Cucumbers - 8.5 oz
- Meyer Lemon Juice - to taste
- Vegetable Oil - 3 fl oz
- Shelled pumpkin seeds - 0.7 oz
- Tomatoes - 2.8 oz
- Lori Cheese - 8.5 oz
- Matsoni - 7 fl oz
- Salt - to taste
Step by Step guide
Step 1
For the filling, finely chop the tomatoes, grate the cheese (if Lori cheese is unavailable, use any other hard cheese), add finely chopped cilantro (about 10 grams per serving) and matsoni. Add salt and pepper to taste.
Step 2
Slice the cucumbers into long strips using a slicer or sharp knife, place the filling inside, and roll them up.
Step 3
Separately, chop the herbs and mixed salad greens, slice the strawberries, add lemon juice and vegetable oil.
Step 4
Arrange on a plate, placing the rolls around the edges, and sprinkle with toasted pumpkin seeds.
