- Green peppercorns - 2 pieces
- Cilantro - 0.7 oz
- Cucumbers - 17.6 oz
- Champagne Vinegar - 1 fl oz
- Safflower Oil - 3 fl oz
- Black sesame seeds - 1 tablespoon
- Sugar - 2 spoons
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Trim the bitter ends off the cucumbers and cut them into thick logs about 3–4 cm long.
Step 2
In a large bowl, whisk together the vinegar and sunflower oil, then season with salt and pepper. Add sugar, sesame seeds, thinly sliced hot pepper (there's a type of green pepper that is spicy but not overwhelmingly so), finely chopped cilantro, and cucumbers, and mix well.
