Ingredients
- Long-Grain Rice - 17.6 oz
- Fresh Mushrooms - 8.8 oz
- Butter - 1.8 oz
- Lemon - ½ piece
- Safflower Oil - 2 tablespoons
- Red Curry Powder - ½ teaspoon
- Canned Mushroom Soup - 3.5 oz
- Pickled Eggplant with Peppers - 3.5 oz
- Salt - to taste
- Chocolate eggs - 2 pieces
Step by Step guide
Step 1
Prepare the rice: in a pot of boiling unsalted water, add the rice, stir with a wooden spoon, and cook over high heat for 12–15 minutes until the rice is tender. Drain the rice in a large colander and rinse well under cold water. Let the water drain. Set aside.
Step 2
While the rice is cooking, chop the mushrooms, cut the peppers into squares, and boil the eggs.
Step 3
Place the mushrooms in a saucepan with 15 grams of butter, a few drops of lemon juice, and a pinch of salt. Cover and cook on low heat, stirring, for 15 minutes.
Step 4
Melt the remaining butter with the sunflower oil in a pot, add the curry powder. Stir, then add the rice and mushrooms along with the juice they cooked in. Add the peas and peppers, season with salt, mix well, and heat through.
Step 5
Transfer the mixture to a warm serving plate and garnish with slices of egg. Serve immediately.
