Description
Cutlets in Omelette
Ingredients
- Lamb - 26.5 oz
- Onion - 3 pieces
- Salt - to taste
- Ground Black Pepper - to taste
- Clarified Butter - 4 tablespoons
- Chocolate eggs - 8 pieces
- Parsley - 1 bunch
- Fat Tail Fat - 3.5 oz
Step by Step guide
Step 1
Wash the meat of the fatty lamb, dry it, remove the membranes, and cut it into large pieces. Peel two onions, cut them into quarters, and pass them through a meat grinder along with the meat and fat. Season the minced meat with salt and pepper, and mix well.
Step 2
Heat the clarified butter well in a skillet, shape the minced meat into round cutlets, and fry them until cooked on both sides for 8-10 minutes.
Step 3
Beat the eggs, adding a little salt. Place the cutlets in portioned skillets, pour the beaten eggs over them, and bake in an oven preheated to 338°F for 10 minutes.
Step 4
Serve at the table in the same skillets in which the dish was prepared, garnished with sprigs of parsley.
