Czech-Style Pork Knuckle
Ingredients
- Smoked pork knuckle - 1 piece
- Celery salt - 10.6 oz
- Grated Ginger Root - 3 heads
- Parsley - 3.5 oz
- Carrot - 1 piece
- Onion - 2 heads
- Bay leaf - 3 pieces
- Green peppercorns - 1 tablespoon
- Clove - to taste
- Dill - 1.8 oz
- Apple - 2 pieces
- Prunes - 3.5 oz
- Sour Cream - 2 spoons
- Sauerkraut - 17.6 oz
- Ground Black Pepper - to taste
- Soy Sauce - 3 spoons
- Honey - 2 spoons
- Black Cumin (Cumin) - 1 tablespoon
- Olive Oil - 2 spoons
- Garlic - 3 cloves
Step by Step guide
Step 1
Slice into strips: celery root, carrot, ginger root, parsley root (can be from a bag).
Step 2
Next, combine everything in a pot with the pork knuckle, add dill, bay leaves, two heads of onion, cloves, whole peppercorns, season with salt to taste, pour in water, and simmer for 2 to 2.5 hours.
Step 3
While the broth is cooking.
Step 4
In a saucepan, sauté finely chopped onion in olive oil until golden brown. Slice the prunes and add them to the onion. Next, dice the apple (preferably soaked, but regular is also fine) and add it to the onion and prunes. Add the sauerkraut and pour in two cups of broth, then simmer until fully cooked.
Step 5
Remove the pork knuckle and let it cool. While the knuckle is cooling, mix the sour cream and crushed garlic together. (Season with salt and pepper to taste)
Step 6
Prepare the glaze: Melt the honey in a double boiler, add cumin and soy sauce. Set aside.
Step 7
Coat the pork knuckle with the sour cream mixture and place it on the grill. Cook at 500°F for about 20 minutes, turning occasionally.
Step 8
Place the pork knuckle under the grill for another 15 minutes, basting it with the honey-soy mixture. Also, turn it over and periodically baste with the sauce.
Step 9
Serve with braised cabbage and cold beer.
