Description
Perfect for making crostini with cream cheese. A great dressing for potato salad. An excellent sauce for pasta and pizza.
Ingredients
- Dandelion leaves - 12.3 oz
- Olive Oil - 8 fl oz
- Garlic - 4 cloves
- Pistachios - 1.4 oz
- Ocean salt - 1½ teaspoons
- Grated Pecorino Pepato Cheese - 2.5 oz
Step by Step guide
Step 1
In a blender, place one third of the dandelion leaves, pour in the olive oil, and blend well. Then add the remaining dandelion leaves in 2 batches, blending thoroughly.
Step 2
Add the peeled and finely chopped garlic, nuts, salt, and Parmesan. Blend until smooth.
Step 3
Check the salt level. If the pesto is too thick, add water or olive oil.
