Description
Dense meatballs with teriyaki sauce
Ingredients
- Onion - 0.9 oz
- Potato - 3 oz
- Breadcrumbs - 0.9 oz
- Chicken Egg - 1 piece
- Cream 22% - 3.5 oz
- Ground meat - 10.6 oz
- Soy Sauce - 2 fl oz
- Rice Vinegar for Sushi - 2 fl oz
- Sugar - 1.8 oz
- Sake - 2 tablespoons
- Corn Starch - 2 tablespoons
Step by Step guide
Step 1
First, finely chop the onion. You can use either white or red onion, whichever you prefer. Sauté it in vegetable oil until golden brown.
Step 2
Next, take the pre-cooked potato and mash it into a puree.
Step 3
Add the breadcrumbs and a tablespoon of water. Then, add the sautéed onion.
Step 4
Crack the egg into a bowl and whisk it with a fork. Add it to the main bowl.
Step 5
Next, introduce the ground meat.
Step 6
Carefully pour in the cream. It's important to monitor the consistency and add it gradually. We should end up with a soft mixture. It's best to refrigerate it for an hour to make it easier to work with, but you can start right away. Add salt and pepper to taste; I didn't add anything because the teriyaki sauce played its role.
Step 7
Form small balls (smaller than a walnut). Roll the ball in flour, shake off the excess, and place them on a board.
Step 8
Fry in a large amount of vegetable oil. You can also try baking them, but that's up to you. Once they have a nice golden crust, remove the meatballs and add a new batch. It's better to fry in small portions so that the meatballs fry rather than stew. The small size ensures that the meatballs are cooked through and not raw inside with a tough crust outside.
Step 9
Place the cooked meatballs on a plate lined with paper to absorb excess fat. Now let's prepare the teriyaki-style sauce. It's simple. We need soy sauce, 6% rice vinegar, sugar, and a couple of tablespoons of sake (optional). If you don't have rice vinegar or mirin, it's better not to make the sauce or buy a ready-made one. You can substitute sugar with honey or sweet syrup.
Step 10
Put a saucepan with our future sauce on high heat. Then simply reduce it to a thicker consistency. To speed up the process, you can help yourself. In a small bowl, mix a tablespoon of cornstarch with a couple of tablespoons of water. Gradually mix and pour the liquid into the sauce while stirring constantly.
Step 11
Remember that the sauce will thicken further as it cools. You can transfer all the meatballs into the sauce and mix well. Serve with pasta, rice, or other grains.
