Description

Detox zucchini fritters with green onions and mint

Ingredients

  • Courgette - 2 pieces
  • Egg white - 1 piece
  • Fresh Mint - ½ bunch
  • Scallions - ½ bunch
  • Wheat Flour - 2 tablespoons
  • Ground Black Pepper - to taste
  • Ocean salt - to taste
  • Butter - 2 teaspoons
  • Grapeseed Oil - 2 tablespoons

Step by Step guide

Step 1

Grate the zucchini on a coarse grater, season with salt to taste, and let it rest for 5–10 minutes.

Step 2

While the zucchini is resting, pluck the mint leaves from the stems and finely chop them along with the green onion tops (add herbs to your liking — I love it when there's a lot).

Step 3

Squeeze the zucchini by hand or through a colander (it will release a lot of water). Add the chopped herbs to the zucchini.

Step 4

Mix in 1 egg into the green mixture. We won't add more salt to the fritters!

Step 5

Add flour and freshly ground black pepper, and mix well. The fritter batter is ready!

Step 6

In a frying pan, melt a piece of butter in the oil (I prefer grapeseed oil). Spoon the fritters onto the pan, flatten them, and cook over medium heat on both sides until golden brown.
