Step by Step guide
Step 1
In a mixing bowl, combine 1.8 kilograms of all-purpose wheat flour (such as 'Sokolnicheskaya') and 300 grams of Italian semolina flour. Add 36 grams of salt and 10 grams of sugar, and mix. In 200 ml of warm water, dissolve 16 grams of yeast. Knead the dough by gradually adding 500 ml of warm water and the yeast mixture to the flour. Then, pour in 220 ml of milk (3.2% fat is ideal) and continue kneading until the dough becomes elastic. If necessary, add a little more milk. Finally, thoroughly incorporate 50 ml of extra virgin olive oil. Cover the bowl with plastic wrap and let it sit at room temperature for an hour to rise. After that, gently knead the dough by hand and refrigerate it for half an hour—then you can start working with it.
Step 2
Grease a 20×30 cm baking dish with olive oil. Stretch and press the dough into the bottom of the dish with your hands, then place it in a warm spot for fifteen to twenty minutes to rise. After that, bake it in a preheated oven at 482°F for five minutes.
Step 3
Take one kilogram of cherry tomatoes and puree them with a blender (do not whip, otherwise the sauce will lose its color). Tear about 20 grams of basil leaves into the sauce by hand (more or less to taste), add two to three teaspoons of extra virgin olive oil, season with salt and pepper, and mix well.
Step 4
Drain the water from the package of buffalo mozzarella balls. Cut the mozzarella for pizza into small cubes. Spread tomato sauce over the dough and place the mozzarella cubes on top. Return to the oven for another five minutes.
Step 5
Meanwhile, slice the buffalo mozzarella into large pieces and the cherry tomatoes randomly. Remove the pizza from the oven, scatter the buffalo mozzarella and tomatoes on top, and return it to the oven for another two minutes.
Step 6
Garnish the finished pizza with basil leaves.
