Description
To make spelt dirty, take clean spelt and add chicken liver to it. The liver will cook down and visually stain the spelt. The dish looks quite intimidating in the end, but liver lovers will appreciate it. You'll need to soak the spelt well in advance; otherwise, cooking it until tender will take several hours.
Ingredients
- Vegetable Oil - 4 spoons
- Spelt - 14.1 oz
- Thyme - 1 bunch
- Coarse Salt - to taste
- Pork Skewers - 8.1 oz
- Chicken Liver - 8.1 oz
- Onion - 2 heads
- Celery stalk - 3 pieces
- Garlic - 2 cloves
- Ground Cumin - 2 spoons
- Cayenne Pepper - ¼ spoons
- Bay leaf - 2 pieces
- Celery salt - 1.4 oz
- Scallions - 1.4 oz
Step by Step guide
Step 1
In a deep skillet, heat 2 tablespoons of vegetable oil over medium heat, add spelt, and sauté, stirring, for two minutes. Add a bundle of thyme and pour in five cups of water. Cover with a lid and cook for ten minutes, then add two teaspoons of salt and cook for another thirty minutes, or until the spelt is tender. Drain in a colander and let cool, discarding the thyme.
Step 2
In the same saucepan, heat 2 tablespoons of oil, add sliced sausages and liver, and sauté for four minutes. Add the chopped onion, celery, garlic, spices, and bay leaf. Simmer for two minutes. Pour in a cup of water and bring to a boil. Cook for eight minutes, until the liquid reduces by half.
Step 3
Add the cooked spelt and continue to cook for about five more minutes, until the liquid is fully absorbed. At the very end, stir in the chopped onion and celery leaves.
