Ingredients
- Canned Grape Leaves - 12 pieces
- Basmati rice - 2.8 oz
- Olive Oil - 1½ tablespoons
- Pistachios - 0.9 oz
- Tomatoes - 24.7 oz
- Passata Tomato Sauce - 2 teaspoons
- Oregano - 1½ g
- Fresh Mint - 1 tablespoon
- Chopped Sage Leaves - 1 tablespoon
- Cinnamon - ½ teaspoon
- Garlic - 3 cloves
- Lemon - ½ piece
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Soak the grape leaves in boiling water for twenty minutes, drain the water, and place them vein side up.
Step 2
In a skillet, sauté the pine nuts in olive oil. Add the cooked rice, a third of the tomatoes, tomato paste, half of the oregano, mint, parsley, cinnamon, and garlic, and cook for two minutes. Squeeze in the juice of half a lemon, season with salt and pepper.
Step 3
Place one dessert spoon of the mixture onto a grape leaf and roll it tightly, tucking in the sides. Repeat with all the leaves. Place half of the remaining tomatoes in a baking dish, place the dolma on top, and add oregano and tomatoes on top. Season with salt and pepper, pour in 70 ml of water, cover with a lid, and cook on low heat for one hour.
