- Dorado - 2 lbs
- Ocean salt - 11 lbs
Step by Step guide
Step 1
First, clean the dorado from the inside, without cutting off the head or removing the scales.
Step 2
Preheat the oven to 240–482°F.
Step 3
Take a heatproof dish that is slightly larger than the fish. Line the bottom and sides of the dish with foil.
Step 4
Pour sea salt into the bottom of the dish, aiming for a thickness of 3 cm of salt.
Step 5
Then place the fish on top of the salt and cover it with the remaining salt so that the fish is almost completely hidden.
Step 6
Put the dish in the oven for 1 hour, then reduce the temperature to 356°F and bake for another 30 minutes.
Step 7
Then remove the fish and break off the crust using a mallet.
