Ingredients
- Dorado - 2 pieces
- Tomatoes - 10.6 oz
- Onion - 1 head
- Garlic - 2 cloves
- Fresh Rose Hips - 2 stalks
- Olive Oil - 5 teaspoons
- Parsley - 1 bunch
Step by Step guide
Step 1
Sauté sliced onion and thin rounds of garlic in olive oil. Peel the tomatoes and cut them into half-moons. Add them to the onion and garlic. Season with salt and pepper. Cook until done.
Step 2
Spread the prepared mixture onto a baking tray, and place the dorade on top. Season the fish with salt and pepper, and brush it with olive oil. Place a sprig of rosemary inside the cavity. Arrange oil-brushed potato rings, 1 cm thick, around the edges of the tray.
Step 3
Bake in the oven at 392°F. After 15 minutes, flip the dish. Then, after another 15 minutes, switch the oven to grill mode and cook until golden brown.
Step 4
Serve garnished with chopped parsley and lemon wedges.
