Ingredients
- Dorado - 2 pieces
- Butter - 0.7 oz
- Garlic - 4 cloves
- Basil - 0.7 oz
- Pumpkin - 5.3 oz
- Lemon - 1 piece
- Wild rice - 3.5 oz
Step by Step guide
Step 1
Preheat the oven to 392°F.
Step 2
Peel the pumpkin, cut it into random pieces, sprinkle with salt, add half of the butter, wrap in foil, and bake for 20–25 minutes.
Step 3
Stuff the fish with basil leaves and garlic, make several cuts on the fish, season with salt and pepper. Heat 2 tablespoons of vegetable oil in a pan and fry the fish on both sides, then transfer to the oven for 15 minutes.
Step 4
In a pot, bring 250 ml of water to a boil, add salt, add the rice, bring to a boil again, cover, and simmer for 10 minutes on low heat until the water evaporates. Remove from heat and stir in the butter.
Step 5
On a plate, place the fish, alongside the boiled rice and top with roasted pumpkin. Garnish with lemon and a sprig of basil.
