Ingredients
- Water - 13 fl oz
- Bacon - 4 pieces
- Pork Skewers - 4 pieces
- Onion - 1 head
- Potato - 12.3 oz
- Salt - 1 teaspoon
- Ground Black Pepper - a pinch
- Chopped Sage Leaves - 1 teaspoon
- Parsley - to taste
Step by Step guide
Step 1
In a pot, bring the water to a boil. Meanwhile, cut the bacon and sausages into thin pieces. Then add these pieces to the boiling water, reduce the heat, and cook for 5 minutes. Remove the meat with a slotted spoon.
Step 2
Peel the potato and onion, and slice them thinly.
Step 3
Preheat the oven to 284°F. Take a heatproof pot (preferably ceramic), place the meat in it, then add the onion, potato, chopped herbs, salt, and pepper. Then pour in the liquid that the meat was cooked in. There should be enough broth to cover all the ingredients.
Step 4
Cover the pot with a lid, place it in the oven, and cook for no more than 1.5 hours, until the vegetables are soft but not mushy.
Step 5
Serve garnished with fresh parsley, alongside Irish soda bread.
