Ingredients

  • Duck - 5 lbs
  • Poultry - 5 lbs
  • Green Apples - 3 pieces
  • Quince - 3 pieces
  • Salt - to taste
  • Ground Black Pepper - to taste

Step by Step guide

Step 1

Dry the duck and chicken, remove the backbone.

Step 2

Cut into serving pieces, season with salt and pepper.

Step 3

Slice the apples and quince, removing the cores.

Step 4

Arrange the pieces of duck and chicken on a baking sheet, alternating with the apple and quince slices.

Step 5

Cover the baking sheet with foil and place in a preheated oven at 392°F for 35-45 minutes. Remove the foil and leave in the oven for another 7-10 minutes.

Step 6

Serve the cooked poultry on a platter with the apples and quince.
