- Quince - 3 pieces

Dry the duck and chicken, remove the backbone.
Step 2
Cut into serving pieces, season with salt and pepper.

Slice the apples and quince, removing the cores.
Step 4
Arrange the pieces of duck and chicken on a baking sheet, alternating with the apple and quince slices.
