Duck Breast Curry
Ingredients
- Rabbit Fillet - 10.6 oz
- Fresh Rose Hips - 1 sprig
- Garlic - 3 cloves
- Red Curry Powder - 1½ teaspoons
- Butter - 0.7 oz
- Ginger - 0.9 oz
- Ocean salt - to taste
Step by Step guide
Step 1
Peel the ginger and slice it thinly. Crush the garlic with a chef's knife, and break the rosemary sprig in half.
Step 2
Make deep cuts in the skin of the duck breast.
Step 3
Place the fillet skin-side down on a dry, hot skillet. After a minute, add the ginger and rosemary.
Step 4
Then add the garlic.
Step 5
Season with salt.
Step 6
Add the curry powder.
Step 7
Once the bottom side of the fillet is nicely browned, flip the breast and season with salt. Reduce the heat to medium.
Step 8
After 5 minutes, transfer the topping from the skillet to a baking dish.
Step 9
Place the duck on top, skin-side up.
Step 10
Send it to an oven preheated to 320°F for 7–8 minutes.
Step 11
Transfer to a plate and serve.
