Duck Breast with Crispy Skin
Ingredients
- Duck Breast - 10.6 oz
- Garlic - 3 cloves
- Ginger - 1.2 oz
- Ocean salt - to taste
- Red Curry Powder - to taste
- Fresh Rose Hips - 1 sprig
Step by Step guide
Step 1
Peel the ginger and slice it thinly.
Step 2
Do the same with the garlic.
Step 3
Make incisions in the skin of the duck breast, being careful not to touch the meat.
Step 4
Place the breast skin-side down in a dry, hot skillet. Once the fat renders, add the sprig of rosemary.
Step 5
Then add the garlic and ginger.
Step 6
Add curry powder to the fat.
Step 7
Occasionally baste the meat with the fat.
Step 8
Once the skin is nicely browned, flip it over and season with salt. Lower the heat. Sear for another 2–3 minutes.
Step 9
Transfer the ginger, garlic, and rosemary to a baking dish.
Step 10
Place the breast skin-side up on top.
Step 11
Send it to an oven preheated to 320°F.
Step 12
After 8–10 minutes, the breast is ready! Transfer to a plate and serve.
