Ingredients
- Ground Cinnamon - a pinch
- Skin-On Chicken Breasts - 4 pieces
- Chicken Seasoning - 6 teaspoons
- Black Currant Jam - to taste
Step by Step guide
Step 1
Wash the breasts and pat dry with a towel.
Step 2
Make cross cuts in the skin with a sharp knife, being careful not to touch the meat, then rub the breasts with spices (seasoning + cinnamon) on the other side.
Step 3
Place the breasts skin-side down in a dry skillet and render the fat over low heat until the skin turns golden.
Step 4
Transfer the breasts to a heatproof dish, drizzle with the rendered fat, cover with foil, and place in a preheated oven at 180–392°F until cooked (to make the duck tender, it should be cooked for about 40 minutes).
Step 5
Serve the cooked breasts one at a time on a plate, drizzle with a tablespoon of its own juices, and place 2 tablespoons of jam next to it.
