Duck Breasts with Spicy Rice
Ingredients
- Long-Grain Rice - 3.5 oz
- Olive Oil - 2 tablespoons
- Spanish onions - 1 head
- Duck Breast - 2 pieces
- Paprika - 1 teaspoon
- Fresh Mushrooms - 1.8 oz
- Dry White Wine - 2 tablespoons
- Cream - 1 fl oz
- Butter - 1 piece
- Herbes de Provence - 2 tablespoons
- Salt - to taste
- Natural Yogurt - 2 tablespoons
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Cook the rice in boiling water until tender.
Step 2
Meanwhile, heat the olive oil in a skillet and sauté the finely chopped onion for 1-2 minutes until soft, stirring. Cut the duck into small strips and coat in paprika, then place in the skillet. Fry for a few minutes until golden brown.
Step 3
Add the thinly sliced mushrooms to the skillet and sauté for 1 minute, mixing well. Add the wine and bring to a boil, then add the cream and stir. Season with salt and pepper and simmer for 1-2 minutes until the sauce thickens slightly.
Step 4
Drain the rice and return it to the pot. Add the herbs and butter. Mix well and divide onto 2 plates, placing the duck beside it. Sprinkle paprika on top.
