Ingredients
- Rabbit Fillet - 2 pieces
- Oranges - 2 pieces
- Garlic - 1 clove
- Apple - 2 pieces
- Mild Chili Spice - 1 piece
- Fresh Mint - 0 oz
- Thyme - 0 oz
- Cocoa Powder - 0.2 oz
- Honey - 2.1 oz
- Soy Sauce - 1 fl oz
- Butter - 0.7 oz
- Safflower Oil - 1 fl oz
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Thoroughly rinse the duck, make shallow cuts in the skin at 0.5 cm intervals, and rub it with salt, pepper, and vegetable oil.
Step 2
Heat a skillet and sear the duck on high heat for 1.5 minutes on each side; preheat the oven and roast the duck at 356°F for 20 minutes.
Step 3
Peel and cut the apples into large wedges, slice 2 thin pieces of chili pepper, and chop it finely.
Step 4
Place the apples in a saucepan, add the butter, 1/3 of the honey, chili pepper, cocoa, and thyme leaves. Mix well and sauté over medium heat for 5 minutes until the apples soften, stirring continuously.
Step 5
Squeeze the juice from the oranges into another saucepan, add the crushed garlic, and reduce the liquid by 50% over high heat; add the remaining honey and soy sauce, stir, and cook over high heat until it reaches a thick syrup consistency for 4 minutes; remove the garlic.
Step 6
Remove the duck from the oven, brush it with 1/3 of the syrup, and roast it on the top rack of the oven at 250 degrees for 30 seconds; repeat this process 2 more times.
Step 7
Arrange the apples and duck on a serving platter, drizzle with the remaining sauce from the baking tray, garnish with mint, and serve.
