Duck in honey-orange glaze
Ingredients
- Duck - 4 lbs
- Chopped Sage Leaves - 1 tablespoon
- Grated Ginger Root - 1 tablespoon
- Salt - 1 tablespoon
- Water - 2 glasses
- Oranges - ½ pieces
- Honey - 11.6 oz
- Butter - 4.2 oz
- Meyer Lemon Juice - 1 tablespoon
- Concentrated Cranberry Juice - ½ glasses
Step by Step guide
Step 1
Preheat the oven to 356°F.
Step 2
In a small bowl, mix together the basil, ginger, and salt. Rub the mixture both inside and outside the duck. Place a quartered orange inside the duck.
Step 3
Place the duck in the dish, breast side up, and pour water over it.
Step 4
In a saucepan, combine honey, butter, lemon juice, and orange concentrate. Bring to a boil, reduce the heat, and simmer until it reaches a syrupy consistency.
Step 5
Brush the duck with syrup, and reserve the remaining syrup for basting the bird during cooking.
Step 6
Cover with a lid and place in the oven for 30 minutes.
Step 7
Then flip the duck over, reduce the temperature to 302°F, cover with a lid, and cook for another 2 to 2.5 hours until tender.
Step 8
Don't forget to baste the duck with syrup while it's cooking. Some time before it's done, remove the lid and brown the bird.
