Duck Liver Salad with Mushrooms and Greens

Ingredients

  • Veal Liver - 10.6 oz
  • Onion - 1 head
  • Fresh Mushrooms - 7.1 oz
  • Olive Oil - 6 tablespoons
  • Butter - 1.1 oz
  • Salt - to taste
  • Ground Black Pepper - to taste
  • Malt Vinegar - 3 tablespoons
  • Leafy Mustard - 3.5 oz

Step by Step guide

Step 1

Wash and dry the leafy greens.

Step 2

Remove the skin from the liver, wash, and dry it.

Step 3

Clean the mushrooms and slice them.

Step 4

Peel the onion and slice it into rings.

Step 5

Heat olive oil in a pan, add butter. Sauté the mushrooms, adding salt.

Step 6

Add the liver and onion to the fat from the mushrooms and fry for 5 minutes. Season with salt and pepper.

Step 7

Mix vinegar with salt and pepper. Whisk with olive oil.

Step 8

Combine all components and dress the salad with the sauce.

Step 9

Place the mixture on the leafy greens.
