  • Sugar - 1.1 oz
  • Herbs - 0.1 oz
  • Mild Chili Spice - 0.4 oz
  • Cinnamon - 0 oz
  • Rosemary - 0 oz

Step by Step guide

Step 1

Marinate the magret in salt and spices, make incisions on the skin, sear without adding oil on both sides, then place on foil, add black peppercorns and orange zest, and bake in a convection oven for 15–17 minutes at 356°F.

Step 2

For the sauce, simmer cherries and lingonberries with sugar and orange zest.

Step 3

On a plate, spread the sauce, place the sliced duck, garnish with berries from the sauce, fresh chili, herbs, and sprinkle with cinnamon.
