- Duck - 1 piece
- Oranges - 2 pieces
- Green Apples - 17.6 oz
- Honey - 2 tablespoons
- Thyme - 1 sprig
- Muscat Wine - 3 fl oz
- Allspice berries - 2 teaspoons
- Coarse Salt - 2 tablespoons
- Sugar - 1 tablespoon
Step by Step guide
Step 1
Rinse the duck, clean it, and dry it with a paper towel. In a mortar, grind the pepper mixture and mix it with salt. Squeeze the juice from the oranges, add it to the spices, and mix. Instead of juice, you can use soy sauce; in this case, use 1 tablespoon of salt. Marinate the duck in orange juice for 6 hours.
Step 2
Place the duck in the oven and let it simmer at 158°F for 10 hours.
Step 3
Next, collect the duck juice that forms after 10 hours of simmering. Reduce it in a saucepan for 10 minutes; you can add 100 ml of muscat wine. Use it as a sauce for the duck.
Step 4
Set the oven temperature to 356°F and continue roasting the duck for 20 minutes.
Step 5
For the side dish, cut the green apples in half, dress them with honey and sugar, and place them on a baking sheet with the duck.
