Ingredients
- Duck - 1 piece
- Green Apples - 4 pieces
- New Potatoes - 5 pieces
- Honey - 2 tablespoons
- Mustard Greens - 2 tablespoons
- Salt - to taste
- Dried cranberries with sugar - ½ cup
Step by Step guide
Step 1
Wash the duck and pat it dry. Remove any unplucked feathers if present. Trim excess fat from the belly. Cut into portion-sized pieces and place in a roasting pan.
Step 2
Preheat the oven to 356°F (350 degrees Fahrenheit).
Step 3
Add roughly chopped apples to the duck. Add salt, honey, mustard, cranberries, and mix well with your hands. Let it marinate for 30–50 minutes.
Step 4
Arrange the duck in the pan so that the apples are underneath the pieces of duck, cover, and place in the oven for 2 hours. After one hour, reduce the temperature to 302°F (300 degrees Fahrenheit).
Step 5
Thoroughly wash the potatoes and slice them into rings or half-rings about 1–1.5 cm thick without peeling.
Step 6
Remove the duck from the oven, add the sliced potatoes, distributing them among the duck, covering with the resulting sauce, and return to the oven for another 30 minutes.
Step 7
10–15 minutes before the end of the baking time, uncover and roast the duck until golden brown, basting it 2–3 times with the sauce from the duck.
