Ingredients
- White Cabbage - 4 lbs
- Carrot - 7.1 oz
- Onion - 7.1 oz
- Vegetable Oil - 2 fl oz
- Dill - 0.7 oz
- Passata Tomato Sauce - 1.4 oz
- Bay leaf - 0 oz
- Salt - to taste
- Ground Black Pepper - to taste
- Wheat Flour - 0.7 oz
- Duck - 21.2 oz
Step by Step guide
Step 1
Take half of a domestic duck, previously singed. Cut into pieces weighing 40–50 grams, wash, and dry.
Step 2
In a preheated pot with vegetable oil, place the duck pieces and fry over medium heat for about 15 minutes until a browned crust forms.
Step 3
After that, add one cup of water to the fried duck, reduce the heat, and cover with a lid, stewing for 30–40 minutes.
Step 4
When all the liquid evaporates, add the previously sliced onion and fry for 3–5 minutes.
Step 5
Next, add the julienned carrot and fry for another 3–5 minutes. Season with salt and pepper to taste.
Step 6
Finely shred the white cabbage, add it to the pot where the duck and vegetables are frying, cover with a lid, and reduce the heat to medium.
Step 7
Dissolve the tomato paste in half a cup of water and add it to the cabbage. Stir occasionally and stew for 15–20 minutes.
Step 8
At the end of stewing, adjust to taste, adding previously sautéed wheat flour until it reaches a creamy color, mixing with a small amount of liquid.
Step 9
Serve as a main dish, garnished with finely chopped dill.
