Description
Goose or duck? We have chosen duck with apples and potatoes as the centerpiece of our Christmas table. Unlike goose, duck is juicier and fattier, which is why we hold this bird in high regard. Here's another recipe and a video master class from a close friend of our editorial team, Chef John Smith.
Ingredients
- Duck - 1 piece
- Garlic - 3 cloves
- Pickled Apples - 6 pieces
- Clove - to taste
- Potato - 2 lbs
- Honey - 1.8 oz
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Trim excess fat from the duck; you can render it, pour it into a jar, and use it for other dishes. Season the duck inside and out with salt and pepper.
Step 2
Mince the garlic and rub it all over the duck, both inside and out, then brush the skin of the duck with honey.
Step 3
Remove the cores from 2–3 small apples, insert a clove into each, and place them inside the duck. Put the duck in a roasting bag and place it in an oven preheated to 392°F for one and a half hours.
Step 4
40–60 minutes before the duck is done, place unpeeled potatoes, scored with a cross on top, and the remaining apples in the roasting pan.
