Duck with apples, baked in a sleeve
Ingredients
- Duck - 1½ kg
- Green Apples - 2 pieces
- Salt - to taste
- Ground Black Pepper - to taste
- Lemon - 1 piece
- Soy Sauce - 3 spoons
- Grated Ginger Root - 1 tablespoon
- Balsamic Vinegar - 1 tablespoon
- Honey - 1 tablespoon
- Olive Oil - 1 tablespoon
Step by Step guide
Step 1
Prepare the marinade: squeeze the juice from the lemon, then add soy sauce, honey, and balsamic vinegar.

Mix everything well.
Step 4
Clean the gutted duck and pat it dry with a paper towel.
Step 5
Rub the inside and outside with salt and pepper, pour over the marinade, and let it marinate overnight (I marinated it for a full day since the duck is free-range and I was worried it might be tough when roasted).

Cut the apples in half, remove the core, and slice them into wedges.
Step 7
Place the apples inside the duck's belly (I didn't secure them, the apples stayed in place well and didn't fall out).
Step 8
Place the duck with apples into the prepared bag (roasting sleeve).
Step 9
and place it in the oven at 180-200°C for one and a half hours (depending on the weight of the duck and your oven).
Step 10
Fifteen minutes before it's done, cut open the cooking bag and brown the duck.
Step 11
Serve the duck cut into pieces with mashed potatoes, drizzled with the duck's juices, and accompanied by a salad of sauerkraut. Enjoy your meal!
