Description

You can add apple slices to the prunes in the duck. Apples in the sleeve can be replaced with potatoes.

Ingredients

  • Duck - 4 lbs
  • Prunes - 17.6 oz
  • Oranges - 2 pieces
  • Lemon - 1 piece
  • Soy Sauce - 3 fl oz
  • Ginger - 1 teaspoon
  • Apple - 2 pieces
  • Garlic - 7 cloves
  • Coarse Salt - 1 tablespoon
  • Starch film - 1 tablespoon
  • Safflower Oil - 3 tablespoons

Step by Step guide

Step 1

To prepare, remove the fat glands from the tail of the duck and any remaining feathers, if present.

Step 2

Next, wash the duck under running water and pat it dry.

Step 3

The next step is to prepare the marinade from oranges, lemon, ginger, and soy sauce. Squeeze the juice from the oranges and lemon, and finely grate the zest; then pour the soy sauce and a spoonful of grated ginger into the mixture.

Step 4

Place the duck in a deep dish, preferably a duck pan, and make several incisions with a knife on the body from the front and back.

Step 5

After that, rub the duck inside and out with the prepared marinade, pouring the remaining liquid over the duck.

Step 6

Cover the duck with plastic wrap and then with the lid of the duck pan, and place it in the refrigerator for 24 hours. If necessary, the marinating time can be shortened or extended. The duck should be turned in the marinade at least twice for better absorption.

Step 7

Before cooking, core the apples and slice them into rounds, then place them inside the roasting sleeve. At the same time, you can preheat the oven to 392°F.

Step 8

Remove the marinated duck from the duck pan and use your hand or a spoon to remove excess zest and marinade from its surface.

Step 9

Next, prepare the rub for the duck: garlic, salt, starch, and sunflower oil. Finely grate the garlic and mix it with salt, starch, and sunflower oil. Rub this mixture thoroughly over the entire duck on the outside; you can also use the leftovers to rub the inside.

Step 10

Stuff the duck tightly with prunes and sew it up with thread or seal it with toothpicks.

Step 11

Then place the duck on the apples in the roasting sleeve and seal it tightly. Put the roasting sleeve with the duck on a tray in the preheated oven at 392°F for 2.5 hours.

Step 12

After 2.5 hours, puncture the sleeve on top and baste the duck several times with the fat that has dripped down. Reduce the temperature to 356°F and let the duck bake for another 20–30 minutes.
