This simple recipe from Westerosi cuisine perfectly aligns with the concept of 'Game of Thrones'—and while it may be fictional, it is also well-suited for a real festive table. Those who are not yet familiar with this literary masterpiece can appreciate, if not the ambiance of the dish, then the simplicity of its preparation and originality. The only important and labor-intensive moment here is the preparation of the duck. The bird is marinated for several hours in a brine with honey and spices and then roasted in the oven for another two hours. The pumpkin with fruits is prepared separately from the duck, but their flavors pair wonderfully when served.

  • Duck - 1 piece
  • Pumpkin - 1½ kg
  • Honey - 1.8 oz
  • Vegetable Oil - 1 fl oz
  • Olive Oil - 1 fl oz
  • Thyme - 8 stalks
  • Dill - 1 tablespoon
  • Salt - 3.9 oz
  • Ground Black Pepper - to taste
  • Allspice berries - 8 pieces
  • Apple - 2 lbs
  • White Balsamic Cream - to taste

Bring five liters of water to a boil, add dill seeds, 100 grams of salt, star anise, and whole allspice. Pour in some honey, stir, and let it cool.

Place the duck in the brine. Put it in the refrigerator for six to eight hours. Remove the duck from the refrigerator, pat it dry with paper towels, and place it in a preheated oven at 194°F for one and a half hours. Then increase the heat to 392°F and roast the duck for an additional thirty minutes until fully cooked.

Cut the pumpkin into pieces measuring 5–6 cm, and quarter the apples, removing the cores. Spread them on a baking sheet, drizzle with vegetable oil and balsamic glaze, add sprigs of thyme, season with salt and pepper, and place in the oven once it has preheated to 392°F.
