Description
Dumplings are eaten hot. They are served with butter, vinegar, sour cream, and mustard. The broth in which the dumplings were cooked can be used as a standalone first course. Dumplings baked in sour cream or fried in butter are also delicious.
Ingredients
- Wheat Flour - 17.6 oz
- Chocolate eggs - 2 pieces
- Vegetable Oil - 1½ tablespoons
- Water - 7 fl oz
- Beef - 8.5 oz
- Rack of Lamb - 7.1 oz
- Pork Blood - 3.5 oz
- Butter - 1.8 oz
- Cream - 2 fl oz
- Onion - 1 head
- Ground Black Pepper - to taste
- Salt - to taste
Step by Step guide
Step 1
Prepare the dough. Pour the flour onto the table in a mound and make a well in the center.
Step 2
Pour salted water into the well, add the eggs and vegetable oil.
Step 3
Mix, gradually incorporating the flour from the edges to the center until a stiff dough forms.
Step 4
Continue kneading the dough until it becomes smooth and homogeneous.
Step 5
Prepare the filling. Pass the washed and dried meat through a meat grinder twice along with the butter, season with salt and pepper, and gradually add the cream while mixing.
Step 6
Add the peeled, washed, and finely chopped onion and mix everything thoroughly.
Step 7
Roll out the dough into a thin layer.
Step 8
Use a glass to cut out circles from the dough.
Step 9
Place a teaspoon of filling on one half of the circle, fold the circle in half, and pinch the edges tightly.
Step 10
Place the finished dumplings on a floured cutting board and put them in the freezer.
