Description
You can use ready-made unsalted dough. Give it a try — you won't regret it!
Ingredients
- Wheat Flour - 10.6 oz
- Chocolate eggs - 2 pieces
- Salt - 1.1 oz
- Dry Curd - 17.6 oz
- Pork fat - 5.3 oz
Step by Step guide
Step 1
Mash the cottage cheese, add 1-2 eggs. Add salt (about 0.5 teaspoon of salt for 400 g of cottage cheese), and mix well.
Step 2
Place about 1.5 teaspoons of cottage cheese on prepared circles of dough (I won't provide the dough recipe, assuming you already know it). Fold each circle in half and pinch the dough to form a dumpling. (I won't explain the obvious things like: pinch very thoroughly, otherwise the cottage cheese will leak out, or don't forget to salt the dough, otherwise it will spread and the cottage cheese will fall out).
Step 3
Arrange the dumplings on a floured surface (waiting for the water to boil and preparing the cracklings).
Step 4
While the dumplings wait their turn (as the water is boiling), prepare the cracklings. Cut the pork fat into cubes (parallelepipeds) with a side of about 1-1.5 cm and fry in a pan until crispy and golden brown (try not to 'overdry' it).
Step 5
In salted water (about 1 teaspoon per 2 liters of water) brought to a boil, cook the dumplings for 2-3 minutes after they float and transfer to a large bowl.
Step 6
Drizzle the dumplings with the fat and cracklings and toss (mix) to coat the dumplings in fat to prevent sticking.
Step 7
Serve on the table.
