Description
The recipe was shared with us by a culinary historian, Sarah Johnson.
Ingredients
- Wheat Flour - 14.1 oz
- Water - 6 fl oz
- Radish - 21.2 oz
- Onion - 3.5 oz
- Vegetable Oil - 2 fl oz
- Scallions - to taste
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Prepare all the ingredients.
Step 2
Mix the water with 30 ml of vegetable oil and 5 grams of salt, stirring until the salt is dissolved.
Step 3
Pour a little of this water into the flour and mix with a spoon, then add a bit more and mix again. Continue to pour all the liquid into the flour this way and knead a stiff dough.
Step 4
Place the dough in a bag and let it "rest" for 40–60 minutes. Knead it once or twice.
Step 5
Peel the radish and grate it using a coarse grater.
Step 6
Dice the onion into small cubes.
Step 7
Heat the oil in a skillet, add the onion, and sauté until golden brown. Let it cool.
Step 8
Lightly salt the radish and let it sit for 2–3 minutes.
Step 9
Squeeze the juice out of the radish and mix it with the sautéed onion. Season with salt and pepper to taste.
Step 10
Roll out the dough into a thin circle and cut out circles with a diameter of 10–12 cm.
Step 11
Place 1 tablespoon of filling on each round and seal the dumplings.
Step 12
In a large pot, bring water to a boil and add salt to taste. Drop in the dumplings, stir, and once they float to the surface, cook for 3-4 minutes. If the pot is not very large, cook the dumplings in batches.
Step 13
Serve the dumplings with radish and green onions.
