  • Wheat Flour - 12.2 oz
  • Milk - 4 fl oz
  • Chicken Egg - 1 piece
  • Spanish onions - 0.7 oz
  • Cilantro - 0.4 oz
  • Passata Tomato Sauce - 0.5 oz
  • Habanero Pepper - 0.3 oz
  • Paprika - 0.2 oz
  • Cayenne Pepper - 0.1 oz
  • Ground coriander - 0 oz
  • Chili Flakes - 0 oz
  • Black Cumin (Cumin) - 0 oz
  • Garlic - 0.1 oz
  • Garlic chips - 0.2 oz
  • Vegetable Oil - 0 fl oz
  • Ground Black Pepper - 0.2 oz
  • Salt - 1.3 oz

Step by Step guide

Step 1

Knead the dough: combine flour, milk, egg, vegetable oil, and salt (11 g). Form into a ball, wrap in plastic wrap, and let it rest in the refrigerator for 30 minutes.

Step 2

Cut the meat into 1.5 cm pieces, slightly cool it in the freezer, but not until it becomes rock hard. Pass the meat through a meat grinder, add the prepared ingredients and spices, and mix well. Before assembling the dumplings, incorporate crushed ice or very cold lamb or chicken broth into the filling – 10-15% of the weight of the filling.

Step 3

"Shape the dumplings. You can cook them right away or place them on a floured baking sheet (with space between each) and freeze them for later use."

Step 4

Boil in a large pot of boiling water for about 5-7 minutes. Serve with sour cream, as delicious and rich as you can find.
