Description
Unlike regular dumplings, these dumplings are shaped into simple half-moons and are slightly larger in size.
Ingredients
- Wheat Flour - 10.6 oz
- Milk - 3 fl oz
- Chicken Egg - 2 pieces
- Beef hoof - 3.5 oz
- Beef Kidneys - 7.1 oz
- Beef Kidneys - 3.5 oz
- Dried Chinese mushrooms - 1.8 oz
- Onion - ½ heads
- Garlic - 2 cloves
- Butter - 1.4 oz
- Ground Black Pepper - to taste
- Salt - to taste
Step by Step guide
Step 1
Boil the beef liver, heart, and lungs separately in salted water with bay leaves until cooked through, then pass them through a meat grinder.
Step 2
Soak the mushrooms and lightly boil them in salted water. Drain the water and chop the mushrooms finely.
Step 3
Finely chop the onion and garlic and sauté them in a generous amount of butter. Add the chopped mushrooms and continue to cook until the liquid evaporates.
Step 4
Add the liver that has been passed through a meat grinder. Mix well, then add black pepper and a little broth in which the offal was cooked for extra juiciness.
Step 5
Prepare the dough by mixing flour, milk, eggs, and a pinch of salt. Roll it out thinly, cut out an 80 mm circle, place a tablespoon of filling in the center, and fold it over to create a crescent shape.
Step 6
Boil in salted water. Serve hot dumplings with sour cream, and enjoy the cooled ones plain, paired with green onions.
