Easter Green Salad with Feta

Ingredients

  • Broccoli - 1 head
  • Snap Peas - 3.5 oz
  • Frozen green bean pods - 0.6 cup
  • English cucumber - ½ piece
  • Avocado - 1 piece
  • Chopped Sage Leaves - ¼ cup
  • Sprout Mix - 5.3 oz
  • Mint Leaves - 0.6 oz
  • Lemon - 2 pieces
  • Olive Oil - 3 fl oz
  • Shelled pumpkin seeds - 1½ teaspoons
  • Sunflower Seeds - 1½ teaspoons
  • Feta cheese - 3.5 oz

Step by Step guide

Step 1

Boil the broccoli, broken into small florets, for 2-3 minutes in boiling water. Drain and rinse under cold water.

Step 2

Boil both types of peas in boiling water for 1-2 minutes. Rinse under cold water.

Step 3

In a large bowl, mix the broccoli, peas, diced cucumber, diced avocado, sprouts, parsley, and mint.

Step 4

In a separate bowl, mix the lemon juice and olive oil. Drizzle over the salad and sprinkle with feta.
