Ingredients
- Broccoli - 1 head
- Snap Peas - 3.5 oz
- Frozen green bean pods - 0.6 cup
- English cucumber - ½ piece
- Avocado - 1 piece
- Chopped Sage Leaves - ¼ cup
- Sprout Mix - 5.3 oz
- Mint Leaves - 0.6 oz
- Lemon - 2 pieces
- Olive Oil - 3 fl oz
- Shelled pumpkin seeds - 1½ teaspoons
- Sunflower Seeds - 1½ teaspoons
- Feta cheese - 3.5 oz
Step by Step guide
Step 1
Boil the broccoli, broken into small florets, for 2-3 minutes in boiling water. Drain and rinse under cold water.
Step 2
Boil both types of peas in boiling water for 1-2 minutes. Rinse under cold water.
Step 3
In a large bowl, mix the broccoli, peas, diced cucumber, diced avocado, sprouts, parsley, and mint.
Step 4
In a separate bowl, mix the lemon juice and olive oil. Drizzle over the salad and sprinkle with feta.
