Eastern Chicken with Couscous
Ingredients
- Meyer Lemon Juice - 1 fl oz
- Chicken fillet - 2 pieces
- Olive Oil - 1 tablespoon
- Couscous - 3.5 oz
- Red Long Chili Peppers - ½ tablespoon
- Garlic - 1 head
- Raisins - 1.4 oz
- Parsley - 0.7 oz
- Chicken Broth - 3 fl oz
Step by Step guide
Step 1
Cut the fillet lengthwise to create a sort of book. Drizzle with lemon juice, oil, and sprinkle with pepper. Optionally, you can add salt. Let it sit for 15 minutes.
Step 2
Now let's move on to the side dish. Pour water over the couscous and let it sit for 5 minutes.
Step 3
Preheat the grill or a regular frying pan. Transfer to the pan and cook for 4–5 minutes on each side.
Step 4
Drain the water from the couscous and add parsley and raisins. Pour in the remaining marinade.
