Eastern Rice
Ingredients
- Basmati rice - 1½ cups
- Water - 6 cups
- Ground coriander - 1 tablespoon
- Parsley - 2.1 oz
- Raisins - 4 tablespoons
- Cinnamon - a pinch
- Ground Cumin - 1 teaspoon
- Olive Oil - 2 tablespoons
- Turmeric - 1 tablespoon
Step by Step guide
Step 1
Heat olive oil in a skillet and add the spices. Set to low heat and stir for half a minute. Add the rice.
Step 2
Begin adding water in small portions (the rice should be cooked like risotto - add the next portion of water only when the previous one is absorbed). The rice should be soft but not mushy.
Step 3
Add the raisins and stir. Finely chop the parsley and add it to the rice. Cook for another minute or two on low heat and serve.
