Description
Eastern-Style Chicken Drumsticks with Dried Fruits and Couscous
Ingredients
- Couscous - 10.6 oz
- Chicken Drumstick - 8 pieces
- Dried cranberries with sugar - 3.5 oz
- Lemon - 2 pieces
- Dried Turkey - 7.1 oz
- Spices - to taste
- Olive Oil - to taste
Step by Step guide
Step 1
Place a deep skillet on medium heat and pour in olive oil, allowing it to coat the bottom evenly.
Step 2
Take the chicken drumsticks and arrange them in the skillet in a sun-like pattern (this will make it easier to add the other ingredients later).
Step 3
Season with pepper to taste, and be sure to add ground sweet bell pepper and curry.
Step 4
Add a couple of small lemons, cut along four sides so that they almost fall apart into wedges (lemons release much more juice and flavor if they are marinated in olive oil with salt. To do this, cut the lemons in the same way and place them in a regular glass jar, sprinkle with salt, and cover with olive oil so that the lemons are fully submerged. You can pack them tightly in the jar to take up more space, but they should still be easy to remove. This homemade preparation can be used in any dishes that require a hint of lemon).
Step 5
Now for the interesting part, add prunes, apricots, and dried berries to the skillet. You can use cranberries, lingonberries, or cherries. I prefer the first ones. It's better if the dried fruits and berries are bought at a market rather than in pressed packaging from a store. They will be much juicier and softer. Plus, the sight of fragrant, vitamin-rich, slightly sticky helpers will give you a great incentive to dive into your own emotions.
Step 6
Add boiling water until it covers the chicken about halfway and cover with a lid.
Step 7
Cook for about 30–40 minutes, stirring and turning the chicken occasionally.
Step 8
While the chicken is cooking, pour the couscous into a separate bowl and add diced butter that has softened at room temperature.
Step 9
Rub the butter into the couscous. To do this, use a squeezing motion to mix it with the butter in your palms. This resembles playing with wet sand or very fine pebbles on the beach. This is the consistency we need to achieve.
Step 10
Pour boiling water over the couscous and let it absorb the water. The amount of water should make the grains swell and become fluffy.
Step 11
Serve the couscous in a mound on a wide plate. Place the chicken drumsticks on top, and arrange the fruits and berries from the skillet around and on the side.
Step 12
Serve hot with fragrant herbal tea.
