Eastern Tabbouleh Salad
Ingredients
- Couscous - 1 glass
- Tomatoes - 17.6 oz
- Cucumbers - 10.6 oz
- Scallions - 3 stalks
- Fresh Mint - 1 bunch
- Lemon - 1 piece
- Olive Oil - 5 teaspoons
- Salt - to taste
- Ground Black Pepper - to taste
- Parsley - 2 bunches
Step by Step guide
Step 1
Prepare the grains according to the instructions on the package. Let cool.
Step 2
Dice the tomatoes (without juice and seeds) into small cubes, peel the cucumbers and also dice them into small cubes, and slice the green onions into thin rings.
Step 3
Chop the parsley and mint leaves.
Step 4
Add the vegetables and herbs to the cooled prepared grains, mix well, season with salt and pepper, and dress with lemon juice and olive oil.
Step 5
Chill in the refrigerator for 30 minutes.
