Ingredients
- Eggplants - 1 piece
- Ramiro Pepper - 1 piece
- Sweet Pepper - 1 piece
- Garlic - 3 cloves
- Sour Cream - 1 tablespoon
- Mayonnaise - 1 teaspoon
- Mustard Greens - 1 tablespoon
- Meyer Lemon Juice - 1 teaspoon
- Sausages - 2 pieces
- Sumac - 1 teaspoon
- Ground Black Pepper - 1 teaspoon
- Salt - to taste
- Olive Oil - 2 tablespoons
Step by Step guide
Step 1
Peel the eggplant.
Step 2
Cut the peppers and eggplant into small pieces.
Step 3
Peel and crush the garlic with a chef's knife.
Step 4
Add it to the heated mustard oil in the pan.
Step 5
Sauté it on all sides to infuse the oil with flavor and then remove it. It will not be needed anymore.
Step 6
Add the vegetables to the fragrant oil.
Step 7
Season with spices and salt.
Step 8
Cut the sausages into thick slices.
Step 9
After 3–4 minutes, stir the vegetables and add the sausages. Sauté for about 7 more minutes over medium heat, stirring occasionally.
Step 10
In a deep bowl, mix mayonnaise, mustard, sour cream, and lemon juice.
Step 11
Transfer the sauté to a serving dish, drizzle with the prepared sauce, and serve.
