Ingredients
- Sourdough Bread - 1.8 oz
- Wheat Flour - 5.3 oz
- Whole Grain Bun - 5.3 oz
- Water - 5 fl oz
- Olive Oil - 1 tablespoon
- Eggplants - 1 piece
- Orange Bell Peppers - 1 piece
- Passata Tomato Sauce - 3.5 oz
- Parmesan Cheese - to taste
Step by Step guide
Step 1
Knead a stiff pizza dough and place it in a warm place to rise, covered with a towel, for 2–3 hours.
Step 2
Once the dough has risen, sauté the eggplants and bell pepper, cut into long strips, in vegetable oil in a skillet.
Step 3
On a work surface generously dusted with flour, roll out the dough by hand to form a pizza shape, and transfer the pizza base to a baking sheet generously greased with vegetable oil.
Step 4
Spread the dough evenly on the baking sheet and top with tomato sauce, followed by the vegetables. Bake the pizza in the oven for 20 minutes or until golden brown. After that, sprinkle it with vegan parmesan and return to the oven for a few more minutes.
Step 5
Remove the pizza from the oven, lightly drizzle with olive oil, and serve warm.
