Ingredients
- Eggplants - 1 piece
- Mayonnaise - 3 tablespoons
- Suluguni Cheese - 0.9 oz
- Sumac - ½ teaspoon
- Garlic - 2 cloves
- Parsley - 2 stems
- Ground Black Pepper - to taste
- Salt - to taste
- Vegetable Oil - 1½ tablespoons
Step by Step guide
Step 1
Finely chop the herbs and place them in a deep bowl.
Step 2
Grate the cheese into the herbs using a fine grater.
Step 3
Add the sumac.
Step 4
Press the garlic using a garlic press.
Step 5
Add the mayonnaise, then mix thoroughly.
Step 6
Slice the eggplant into thin slices.
Step 7
In a heated skillet, place the slices, season with pepper, and drizzle with oil if needed.
Step 8
Once the bottom side is browned, flip and reduce the heat slightly. Add salt.
Step 9
After 3–5 minutes, remove from heat and transfer to several layers of paper towels to absorb excess fat.
Step 10
Spread the prepared filling on the eggplant slices.
