  • Eggplants - 2 pieces

  • Pickled Chanterelles - 1.8 oz
  • Potato - 1 piece
  • Mint - 1 bunch
  • Scallions - 1.1 oz
  • Sour Cream - 1.8 oz
  • Passata Tomato Sauce - 2 tablespoons
  • Ground Black Pepper - to taste
  • Salt - to taste

Step by Step guide

Step 1

Bake the eggplants in the oven, let them cool, and cut into cubes.

Step 2

Cut the bacon, tomato, and pickled mushrooms into cubes.

Step 3

For the sauce, mix the sour cream with the tomato paste thoroughly, add finely chopped green onion and mint.

Step 4

Combine all the ingredients, season with salt and pepper, and dress the salad with the sauce.

Step 5

Before serving, garnish the salad with mint leaves.
