Ingredients

  • Eggplants - 2 pieces
  • Cucumbers - 2 pieces
  • Green onions - 5 stalks
  • Garlic - 3 cloves
  • Chili Pepper - ½ piece
  • Cilantro - ½ bunch
  • Sugar - 1 teaspoon
  • Salt - ½ teaspoon
  • Soy Sauce - 1 tablespoon
  • Vinegar - 1 teaspoon
  • Vegetable Oil - 1 fl oz
  • Tomato - 1 piece

Step by Step guide

Step 1

Cut the eggplants into medium-sized pieces, sprinkle with salt, mix, and set aside for 10 minutes. Finely chop the onions and herbs. Peel the cucumbers and slice them into rounds. Also slice the chili pepper into rounds. Dice the tomato into small pieces.

Step 2

After the time has elapsed, fry the eggplants in vegetable oil. Place the fried eggplants on a paper towel to remove excess oil.

Step 3

Assemble the salad. In a salad bowl, layer the eggplants, cucumbers, tomato, green onions, cilantro, and chili pepper, add the crushed garlic, sugar, spices, vinegar, and dress with 1 tablespoon of soy sauce. Mix everything well and serve.
